Goan Tofu Vegetables
Pointer: Get extra firm tofu. Drain water. Bake at 400 degrees for 10 minutes. Then broil at high for another 5 to 8 minutes.
Ingredients:
- 4 cloves garlic
- 1/2 medium-sized red onion chopped
- 1/2 onion cut lengthwise into slivers
- 1" fresh ginger
- 2 cloves
- 1/2" cinnamon stick
- 2 tomatoes chopped
- 1/2 green pepper cut
- 1/2 a carrot cut
- 5 fresh green beans cut to 1" length
- 1/2 tsp. turmeric powder
- 2 tsp. chillie power
- 1/2 tsp. coriander powder
- 1/2 tsp. cumin powder
- 2 Tbsp. chopped fresh coriander
- A pack of tofu cut into cubes
- 1 cup coconut milk
- Oil to sauté
- Salt to taste
Method:
Grind together the onion, chillies and garlic. Take a wok^. Add 1 Tbsp. canola oil. Roast cloves and cinnamon stick. Add the ground ingredients and sauté until lightly browned. Add the rest of the cut onions. Sauté until translucent. Add tomatoes, green beans, carrots and green pepper. Sauté with the ground mix until beans are half cooked.
Add turmeric, chillie, coriander and cumin powder. Mix in the broiled tofu, add the coconut milk and salt to taste. Close container and cook for 10 minutes. When vegetables are done turn off stove. Garnish with chopped coriander leaves.
